Breakfast/lunch egg recipes?

I’m trying to get some muscle built up, and I’m a vegetarian, so eggs are the best thing to eat for protein.

Other than omelets, egg salad sandwich, etc. what are some good foods that are mainly eggs?

Breakfast and lunch foods would be best. :)

    It’s not eggs sorry but a better source of protein are lentils. Make a big vegetable stew jam packed with lentils. Yummy, healthy, and packed full of protein!

    I love making Quiche’s which can also incorporate onion, capsicum (peppers) corn, zuchinni you would just omit the bacon that is normally in a quiche

    Also my mum makes what we call ‘sweet n sour eggs’. Its basically hard boiled eggs with a holandaise type sauce served over mashed potato.
    To make the sauce you make a rue from butter and plain flour, then add equal quantities vegetable stock and milk till it goes nice and thick, then add mustard, capers, salt, pepper, sugar and lemon juice to even out the ‘sweet n sour’ flavour.
    Its one of my very favourite dishes as a child and I still love it now as comfort food!

    for protein, why dont try tofu or tempeh?they’re equally high in protein too you know

    try fritatta, french toast,scrambled eggs, semi/hard boiled eggs, strata

    pasta is good sorce of egg if you make it yourself. Its easy just flour egg and thats the basic, i make it all the time, just make sure you roll the dough real thing and only cook for a min or two. you can also dry it.
    The more egg yolks you add the richer pasta you get

    DEVILED EGGS

    Ingredients
    12 eggs
    4 tablespoons mayonnaise
    2 teaspoons yellow mustard
    2 teaspoons sweet relish
    Salt
    Pepper
    Paprika, for dusting

    Directions
    Place eggs in a large wide saucepan and cover with cold water. Bring to a boil for 12 minutes. Remove eggs and and cool in refrigerator. Remove shells from eggs and slice in half lengthwise. Separate egg yolks and place into a bowl. Place whites on a separate plate. Add mayo, mustard, relish and salt and pepper, to taste, to yolks and mash together with a fork until creamy and smooth. Using a large star tip and resealable plastic bag, pipe the yolk mixture back into each egg, enough to fill yolk holes completely. Dust tops with paprika. Refrigerate. Serve cold.

    RIVIERA EGG PIE

    Ingredients
    3 tablespoons oil
    1 large onion, diced (about 2 1/2 cups)
    2 (9-inch) refrigerated, unbaked pie crusts (a 15-ounce package)
    1 (10-ounce) package frozen chopped spinach, thawed and drained
    1 1/2 cups freshly grated Parmesan
    1 cup ricotta cheese
    4 eggs, plus 1 yolk, slightly beaten
    1/4 teaspoon kosher salt
    1/4 teaspoon freshly cracked pepper
    1 egg white, lightly beaten
    Directions
    Preheat oven to 425 degrees F.

    Heat oil in large skillet over medium-high heat. Add onion and saute until translucent and just golden, about 8 minutes. Remove from heat, transfer to a large bowl and allow to cool while preparing crust.

    Remove 1 of the prepared pie crusts from the refrigerator, and place in an ungreased, 9-inch pie plate. Shape the crust to fit the form of the pan with a 1/2-inch overlap around the edge.

    To the onion mixture, spinach, cheeses, 4 eggs plus 1 yolk, salt, and pepper, and mix well. Spread mixture into prepared crust. Cover with remaining pie crust; crimp edges and score to vent. Brush with egg white and bake until golden brown, about 40 to 45 minutes. Let stand at least 15 minutes and serve warm or at room temperature.

    OMG i love eggs i’m a egg crazed girl eat 24 of them if not more a week
    yup best protein i’m pretty much a vegetarian as well eggs all i eat for protein so i eat alot you can try hard boiled eggs or deviled eggs or scramble the eggs and put in a sandwich with two slices of toasted wheat bread
    you can try taking brown rice and or white and or wild rice just enough for u and toss in some scrambled eggs and some mixed vegetables like green beans peas carrots u can buy in frozen food section and make like a fried rice but its a healthy fried rice for vegetarians
    you can also try a hard boiled egg salad put two hard boiled eggs over lettuce cherry tomatoes olives onion carrots add some nuts if u like enjoy with fat free dressing or with out
